Do You Need Wet and Dry Measuring Spoons?

baking tip Jan 17, 2024

Ingredients such as baking powder need to be kept dry. Do you know why? Baking powder is an active ingredient which means it will start doing its job once it becomes wet. You want the baking powder to start working when it has all of the other ingredients in the bowl. Unless the recipe states that the mixture needs to sit on the counter or in the fridge before baking, you need to make sure you don't add wet ingredients to the baking powder or soda too early.

If your baking powder becomes wet too early, your baked goods might not rise properly. No one wants a flat cake! No siree, BOB!

If you can't make the whole dessert and put it into the oven before you have to do something else, my suggestion would be to put the wet ingredients together in a separate bowl from the dry. When ready, mix them all. For most recipes this is okay but it's always best practice to read the recipe before beginning the first step.

Having multiple measuring cups and spoons is good practice for a baker. However, if you only have one set, that's okay. There is a trick that I mentioned in the video.
