X is for...xanthan gum.

Honestly, this was a hard letter. What dessert starts with X? Nothing good but there is an ingredient. If you're not gluten-free or don't bake gluten-free items, then you don't need to buy this ingredient. Xanthan gum is already in the flour you buy but for some gluten-free flours, you have to add xanthan gum to it before adding it to your baked good. 

This ingredient helps bind the ingredients together so gluten-free flour can act like flour with gluten. If you notice, gluten-free bread is more naturally soft and airy compared to gluten-filled bread. Sometimes that's a good thing but with cake and cookies - not so much since we don't want a flat boring-looking cookie. Or do you???? ;)
